For a couple of months now I’ve been thinking about trying to
make something interesting with chicken wings. I was inspired
by Shola’s “Wings of Desire”. He uses the center section
and using a couple of techniques turns them into a crispy and delicate
piece of chicken worthy of a more refined plate.

I’m following his basic procedure with my own spices and aromatics.
After an overnight cure I’m going to figure how they are going
to be cooked. I have some Activa laying around so maybe they
will end up as a torchon.
